Creamed Coconut Powerballs recipe with Waimarino Organic Virgin Coconut Oil

Creamed Coconut Powerballs

I would like to thank Ian Haldene for this wonderful recipe.

These are an instant energy blast that can be made in 5-10 minutes.

Ingredients:

  • 500ml Creamed Coconut
  • 3-4 generous Tablespoons of Waimarino Organic Virgin Coconut Oil
  • Dried cranberries to taste, or dried apricots instead to taste
  • Half a cup of desiccated/shredded coconut
  • Walnut pieces to taste
  • 2 dessertspoons Coconut Nectar. Add another dessertspoon or two if you want it sweeter.

Put jar of creamed coconut into a pot of hot water to soften. Remove half the jar and place in food processor  and give it a whizz in food processor with the Coconut Oil. 

Pulse the food processor to mix in dried cranberries or apricots, walnuts, decimated/ shredded coconut and coconut nectar, or mix it by hand if you want a more chunky raw texture.

Remove from food processor and put mixture into a ice cube maker and put in fridge or freezer for quicker hardening.

This can be eaten within an hour once mixture is hardened. This must be kept refrigerated as it will melt. Use a sharp knife to get PowerBalls out of ice cube tray.

Guaranteed - no dips in blood sugar for 3-4 hours after you've had one or two of these.
