Coconut Xmas Fruit Mince

This is a Fruit Mince Pie Filler using Waimarino Virgin Coconut Oil (Vegetable Fat) as the fat in the Fruit Mince. it can be made in 20-30 minutes. You can use plain or organic fruit and ingredients in this recipe.


  • 225gms Waimarino Organic Virgin Coconut Oil.
  • 225gms Currants
  • 225gms Apple (Granny Smith’s)
  • 225gms Sultanas
  • 225gms Raisins
  • 225gms Mixed Peel
  • 225gms Coconut sugar
  • 25gms chopped up Blanched Almonds
  • ¼ teaspoon salt
  • ½ teaspoon Nutmeg
  • 2 Tablespoons of Brandy or Whisky or Lemon Juice

Put the Organic Virgin Coconut Oil, Currants, Apples, Sultanas, Raisins, Mixed Peel and blanched Almonds into your food processor and give it a whiz.

If the entire ingredients don't fit in your food processor, make sure you split the Organic Virgin Coconut Oil evenly between the batches to ensure it mixes well.

Mix the remainder of ingredients in and give the mixture a good stir.

If you want to keep the Xmas Fruit Mince for months, put in the Brandy or Whisky and give it one last good stir. Then put mixture into glass jars and put into pantry until needed.

To make fruit mince pies, use 175gms of Flaky Pastry.

Roll out half of the Flaky Pastry very thinly and line patty or muffin trays with rounds of flaky Pastry. Spoon Coconut Xmas Fruit Mince into each one. Roll out rest of pastry. Cut into rounds or stars and put these on top of Coconut Xmas Fruit Mince.

Bake for 20 mins in a 215 C oven. When cold sprinkle with icing sugar.
